It stands for Straight Egyptian - in the same vein you can have Straight Spanish - Straight Russian/Polish or 100% Crabett.......

To simplfy it means that all that horses familial blood is entered into that studbook(i.e SE) since the Studbook stopped accepting entries/closed.
