Next weekend we are full of B&Bs & I have to do a three course meal for eight on the Saturday night.......they have given me an idea of what they would like & have requested fish pate for the starter. Now I've never made pate let alone fish pate.....have checked out some recipes - looks reasonably easy. Does anyone have a really nice recipe they would like to share with me please

Mackerel pate is nice and dead easy. Two mackerel fillets in the nasty plastic wrap deskinned. One smallish tub of Philidelphia or similar. Lemon juice and lots of black pepper. Adjust fish to cheese ratio according to taste (I dont believe in weighing ingredients..) Jx

Judith - my step grandmother used to make an excellent smoked mackeral pate. She's too poorly for cooking much these days. I'll ask my Mum if she's got it written down anywhere. |

Actually, Julia's recipe sounds like Gran'ma! It is SOOOO tasty and dead easy too. |

any good smoked fish...into blender...with good salty butter and lots of ground pepper..splash of either lemon juice or tabasco....wiiiizzzzz . Done. put on toast ....and eat. |

Thanks folk We don't have a local fishmongers - although a fish stall comes to Builth once a week - so suppose it will be see what they have - they do have nice fish!
Pixie - we don't have a local M&S or Waitrose.........nearest are about 2 hours plus away |

Smoked mackerel fillets, juice of half a lemon (or to taste), tub of creme fraiche and about a tablespoon of horseradish cream (or to taste - smoked mackerel and horseradish - marriage made in heaven). Chuck it all in a blender, whizz the life out of it, taste, adjust seasoning if necessary (eeeeh, get me, I sould like a cookbook), chuck it in some individual ramekins and chill in the fridge. Haven't a clue what it tastes like, but sounds OK |

What are you lot like!!!!! lol.
Cant offer any advice Judith - never attempted fish pate but if its anything like liver pate, you wont go wrong. A splash of alcohol always makes all the difference to that!!!

Arabic has a point but I wouldn't get mixing Tia Maria or Baileys with Fish Pate if I were you. The guests will be running for the hills. |
