Come on you wonderful lot - need a recipe for pepper sauce (for steak) - can't find one anywhere!!!

For the sauce 1 tbsp peppercorns, crushed 1 tsp Dijon mustard salt and freshly ground black pepper splash of white wine 85ml/3fl oz double cream 1 beef stock cube, crumbled splash of hot water To make the peppercorn sauce, heat the peppercorns, mustard, seasoning, wine, cream, stock cube and water in a small pan and heat for 5-6 minutes to reduce |

I always use sherry or brandy, not white wine it lifts the whole sauce,

Jilly - OH should have been a chef in another life...LOL I look at food in the raw state & panic.......he just cooks with no fuss & it always amazes me as when I cook I really do need to use every chopping board, knife etc.........always have mountains of stuff to put in the dishwasher.............OH - minimal things used.....
I leave him in charge of the cooking for our B&Bs - he seems to rather enjoy it! I'm safer carrying & fetching, laying the table etc!! LOL

Judith, Buy jar or tin of green peppercorns (usually in a brine or water). Get fat from steak and render so you have some beef fat (or a bit of oil will do) and fry a desertful or more. Fry a few mins, pressing down to crush a few every now and then and then add double cream - a reasonable amount, quarter to half a pint. Then bring to bubbling and just let it simmer, stirring. Don't let it get too thick as it will keep thickening after you take it off the heat. It's great... You can do the same with a desertspoonful of French Mustard (not Dijon, the old brown creamy French mustard) and they're both SO tasty!! |

Hmm! OH is out skittling, ( local Skittles team )..kids are next door at grandmas, I have a night in on my own ( Bliss!) got CSI to watch ..got a nice bottle of rioja......and now thinking I should do a peppered steak too !! thanks for the inspiration ! Pol |

The steak & pepper sauce was abso FAB!!! I'm stuffed & very happy! Rather rich & don't think I could eat it every day! I've tipped the chef
Plain food now for a day or so!

Lucky you Judith! I'd love to have an OH who cooked...with my great love of food n'all By the time I get home I usually resort to one of my usuals: Spag bol, chilli, shepherds pie, chicken curry OR chuck it all int wok and whizz it round! |

Im another packet person. I buy the mild creamy peppered sauce and i love it... Its even husband proof, He has made it a couple of times which he does not do cooking so cant be bad. |
